Here we are at Cedar Point Fed. Campground near Morehead City, NC. Not much going on...just several folk enjoying a new life style. We have piddled on our sailboat; but, the weather has not been accommodating for a sail. Having daily rain with a few storms...nothing bad like some other areas who have picked up heavy wind and hail. J checked on re-joining the VFW and will do so next trip down as it is about 1/2 mile up the road from here with 7-8 campsites IF needed. The birds have been active...woodpeckers, bluebirds, doves, bluejays, with an occasional yappy crow and squawk of geese as they fly low going to roost.
We checked out Bogue Pier where the daily rate (including a fishing license for the day) is $10 and one can use 2 poles. I use to love to pier fish. May have to try it again. Yesterday no one catching anything more than less than hand size bait. Grrrr We also found the nearby library checking out a couple books for these rainy days.
We have been tuned into the Summer Olympic games on TV as we enjoy sports. Have cheered on the USA as they have won several medals.
bottom greased pan...layer of finger thick sliced onion...a head of garlic (cloves peeled and spread around....place seasoned string beans on top (spices of choice)
1 inch rack...slice potatoes finger thick to cover rack...grease with olive oil
Cook the above for about 20 min. Then add the next rack over top the veggies....
4 inch rack...3-4 chicken breasts. I put spices of choice unter and on top of the chicken skin...spray the chicken with olive oil...place on rack.....cook for 10-15 min.....TURN chicken breasts over and cook for 10-15 min. more until forks tender and juice runs clear. YUM! YUM!
J is looking forward to firepit weather where he can cook a butterflied chicken and steam veggies in reynolds wrap.
