J needed a sugar fix so we spent one of our "Pelican Pound" $5 wooden coins plus a few extra dollars for a 1/2 dozen eclairs at the local bakery. They were yummy; but, not as fresh as we would have liked.
Anyone for Pimento Cheese? I love the stuff. Here is a good homemade recipe from FB. Enjoy!
Paula Dean's Pimento Cheese
1/2 t. Paula Dean's House Seasoning
1/2 c. mayo1 c. grated Monterey Jack cheese
1 c. grated sharp cheddar cheese
1 3-oz. pkg. cream cheese
2 to 3 T. pimentos, smashed or diced
1 t. grated onion
Cracked black pepper
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended.
Another tour took us thru tightly knit housing developments with continued construction after Hurricane Katrina. Some folk chose to rebuild while others have chosen to leave behind empty lots FOR SALE. The Gulf of Mexico appears so tranquil compared to the Atlantic. We stopped for a photo shoot of the Biloxi Bay Bridge Mosaic walls a tribute to the natural coastal beauty. There are four walls. Below are a few bits 'n pieces of each wall.
We toured the last side of Ocean Springs into Martin and De Iberville crossing a bay to Jimmy Buffet's Margaritaville Casino in Biloxi, MS. Our Players Club cards gave us each $10 FREE to play the slot machines, 2 drink huggies, BOGO lunch at the Feeding Frenzy Buffet, and a voucher for BOGO dinner in their restaurant. Lunch was delicious.
We played the penny Emerald Eyes slot machine coming away with $5.80 to our good. Not bad for an afternoon of fun.
January 19th will be hit the road again for another campground nearby.
Weather has not been bad here at Ocean Springs, MS. Temps have been like a yoyo ranging from morning 28 to low 30's climbing to 50-60's by mid afternoon. We have enjoyed walking, J biking, chatting with a variety of folk from all parts of the US and scouting the area.
